Toki is the House of Suntory's blended Japanese whisky, drawing on the Hakushu and Chita distilleries at its core with Yamazaki malt in support. It was built with the highball in mind.
Mood: Bright, light, crisp.
Sommelier's note
"Built for ice, soda and a tall glass — fighting that is missing the point."
Tasting notes
The nose is basil, green apple and honey. The palate turns citric and herbal with grapefruit, green grape, peppermint and thyme. It finishes subtly sweet and spicy, with vanilla oak, white pepper and ginger.
Pairing
The Japanese highball is the house serve: one part whisky, three parts cold soda, plenty of ice, no fuss. It also works neat, and stands up to grilled food, salty snacks and anything off a yakitori-style skewer.
