Pacifica Cabernet Sauvignon
This Cabernet Sauvignon reflects the wide differences in terroir in the Walla Walla Valleyfrom vineyards planted in wind-blown loess such as Seven Hills to ice age flood silts such as Pepper Bridge. Each lot was hand harvested ripe and gently crushed into one ton sealed fermenters. These special fermenters allow soft extraction of fruit and tannins. The wine was settled and then aged on new French and American oak for eighteen months.
Elegant, smooth, and sophisticated. This Cabernet shows aromas of dark fruit, earth, and herbs. A seamless middle palate of blackberry, plum, and dark cherry with hints of tobacco and leather on a dusty tannin, richly structured finish.
