Our sommelier says
The color is pale straw and the bead is steady. Green apple and citrus lead the nose with a touch of brioche. It is more crisp than complex, and that is exactly the brief. On the palate it is dry with fine bubbles, and the finish is clean enough to send you after a second glass. Because it is mevushal, it can pour through a full simcha line with nobody tracking the bottle. Note that this is a New York sparkling and not actual Champagne, which is the point. At a kosher simcha price, it does the job Champagne does.
Tasting notes
Lemon zest, green apple, light brioche. Crisp and dry, with a citrus core and fine bubbles that persist. Dry, clean, and refreshing.
Food pairing
For toasts, smoked salmon, light hors d'oeuvres, and citrus desserts, or in mimosas with orange juice.
