Jonathan Hajdu, the shomer-shabbat winemaker at Covenant, makes Hajdu Syrah as a small-lot California red. The fruit comes from Sonoma County vineyards and is whole-cluster fermented. It is a Rhone-focused Syrah meant for the sofa more than the trophy shelf.

Mood: Savory, meaty, layered.

Our sommelier says
California Syrah in a Northern-Rhone style, with smoked black fruit, cracked pepper, and a savory-meaty core that keeps on unfolding.

Tasting notes

The nose gives blackberry compote, cured meat, black olive, and cracked white pepper. On the palate it is full-bodied and layered, starting with dark berry fruit and moving through the mid-palate to smoked oak, tapenade, and a whisper of dark chocolate. The finish is long and peppery, with grippy tannin and a savory umami echo.

Food pairing

This wine suits grilled ribeye, smoked brisket, mushroom-forward dishes, and whatever comes out of a Shabbos cholent pot. Aged hard cheeses are a good match as well.
