The Reserve Shiraz from Dalton is a varietal Galilee Shiraz, grown on old-vine plots and given twelve-plus months in French oak.
Mood: The Rhone drinker who hasn't tried serious Israeli Shiraz. The Shabbos table that wants peppery depth over Cabernet's structure.
Our sommelier says
It is deep purple and dense in the glass. The nose is classic Northern Rhone style as filtered through the altitude of the Upper Galilee, with blackberry, plum, black pepper, smoked meat, and a wisp of dried violet. On the palate it is full-bodied, with fine tannin and the peppery warmth that Shiraz gives in its serious form. The French oak brings roundness and spice and does not bury the varietal signature. The finish is long, savory, and peppery. Decant it for thirty minutes. It will hold five-plus years.
Tasting notes
Plum, blackberry, smoked meat, black pepper, dried violet. Full in body with peppery warmth, fine tannin, and integrated oak. Savory, long, and peppery.
Food pairing
Serve with lamb shoulder, grilled merguez, ribeye, slow-braised short ribs, or hard cheese (after the wait), or at a Yom Tov seudah.
