Dalton's single-vineyard Cabernet Sauvignon from Elkosh, a parcel planted in 2009 at 720 meters in the Upper Galilee, where the chalky soil is dotted with black flint and ancient fossils. Only the free-run wine goes into this bottle, and it rests 18 months in French oak.

Mood: poised, deep, occasion-worthy.

Our sommelier says
The ammonite on the label is a fossil dug out of this very vineyard, and the wine tastes like it comes from one particular place: dark fruit first, then a cool lift of hyssop and wild mint. Open it for the meal you planned around the wine.

Tasting notes

Full-bodied and elegant, with berries and black cherry layered over hyssop and wild mint. Eighteen months in French oak give it structure and polish, and the winery expects it to age well over the coming decade.

Food pairing

Roast beef, lamb, or a board of aged hard cheeses. Serve just under room temperature, 64 to 68°F.
