Bacan Guaro 29 is the stronger of the two Bacan aguardientes, made in Cali, Colombia from first-press organic sugarcane juice, organic Spanish star anise and water. It is distilled five times in small batches of under 1,000 liters and bottled sugar-free.
Mood: bright, peppery, lively.
Our sommelier says
Light and airy for 58 proof, with the anise carrying all the way through and a fresh lift of citrus and ginger. The one to reach for when you want a cocktail with backbone.
Tasting notes
Anise, black pepper and rosemary on the nose. The anise carries onto the palate with soft citrus and ginger notes. The finish is clean and refreshing.
Food pairing
Pour it as a cold shot for a l'chaim, or build a highball with tonic, lime and a splash of lychee. It stands up well to grilled meats, spiced chicken and Sephardic mezze.
